Gellan gum is a water-soluble polysaccharide produced by the bacterium Sphingomonas elodea. It is commonly used as a gelling agent, stabilizer, and thickener in the food industry. Gellan gum is also used in the pharmaceutical and biotechnology industries for drug delivery and tissue engineering applications. It is known for its ability to form strong, transparent gels at low concentrations and its high thermal stability.


Gellan gum E418 has high acyl Gellan Gum and low acyl Gellan Gum. Some of its common applications include:

  • As a gelling agent in food products such as desserts, jams, jellies, and confectionery
  • As a stabilizer and thickener in dairy products, sauces, dressings, and beverages
